Super easy basic pancake recipe

One day I woke up when I was about 12 and asked my mom if she could make me pancakes, she said no but you can make them and I'll tell you how. Unsure of what I was doing this is the recipe she taught me. It's super easy and you can add all kinds of other stuff to make them even better.

Here's what you need

1 cup flour
1 teaspoon salt
1 teaspoon baking powder
1 cup milk (i use goat's milk but you can use cows milk almond milk soy...coconut milk doesn't work well)
1 egg

Mix your dry ingredients together.
Mix your wet ingredients together.
Then add the dry ingredients to your wet ingredients and mix until there are no lumps ( or very few )

Heat a non stick pan a touch above medium around 6 or 7 then using a ladle scoop mixture into pan. When there are quite a lot of bubbles on the top of you pancake flip and cook until golden brown.

How to make em even better
You can add a teaspoon of vanilla.
Chunks of soft fruit like banana, sliced or blended fruit, blue berries, shredded apple and cinnamon, chocolate chips.

To make then a bit more fluffy you can add a teaspoon of vinager it activates the baking powder and gives them a buttermilk taste you could also add a half teaspoon of baking soda to make them even fluffier.
